RED VELVET BANANA BREAD

Yield: 1 loaf

Serving Size: 1/10 slices

Ingredients:

1 red velvet cake mix (just the dry mix, not the other ingredients on the box)
3 eggs
1/3 cup canola or vegetable oil
1 cup mashed bananas (about 3 medium bananas)

optional: powdered sugar for dusting

Instructions:

1.Preheat oven to 350ºF. Line a 9x5x3 loaf pan with foil or parchment paper and lightly spray with a     non-stick cooking spray.
2.Mix together all ingredients until batter forms.
3.Pour batter into prepared loaf pan.Bake for 40-50 minutes or until a toothpick inserted comes out mostly clean.
4.Let cool for 10 minutes before removing from loaf pan.
5.Store in airtight container at room temperature for up to one week.

Notes: You could also bake as muffins. Adjust the bake time to 20 minutes.

GLAZED APPLE OATMEAL COOKIES

 These Glazed Apple Oatmeal Cookies are filled with apple chunks, spices, and topped with a deliciously sweet glaze.
Prep Time : 15 minutes
Cook Time: 15 minutes
Total Time : 30 minutes

Yield: 3 dozen

Ingredients : 

2 3/4 cups old-fashioned oats
1 1/4 cups all-purpose flour
1 1/2 teaspoons apple pie spice
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cups butter, softened
1 1/4 cups brown sugar, firmly packed
1 egg
1/4 cups plus 2 tablespoons milk
2 teaspoons vanilla extract
1 cup diced apple (about 2 apples)
1 1/2 cups confectioner's sugar

Instructions: 

1.Preheat oven to 350F. Line baking trays with silpat mat or parchment paper. Set aside.
2.In a medium bowl, mix together the oats, flour, apple pie spice, salt, and baking soda. Set aside.
3.In a large bowl, cream together the butter and brown sugar with a hand mixer until fluffy.
4.Beat in egg, 1/4 cup milk, and vanilla.
5.Gently fold in apples and oat mixture until combined.
6.Drop spoonfuls on baking trays, two inches apart.
7.Bake for 15-18 minutes, or until golden brown.
8.Remove from oven and let cool for 5 minutes, then move to wire racks to cool completely.
9.While cookies are cooling, prepare glaze.
10.In a small bowl, whisk together the confectioner's sugar and 2 tablespoons milk.
11.Drizzle over cooled cookies.
12.Enjoy!
